Ingredients:
For the Waffles:
- 2 cups (250g) all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 package (2 1/4 teaspoons) active dry yeast
- 2 cups (480ml) warm milk
- 1/2 cup (115g) unsalted butter, melted and cooled slightly
- 2 large eggs
- 1 teaspoon vanilla extract
For the Berry Compote:
- 2 cups (300g) fresh or frozen mixed berries (strawberries, blueberries, raspberries, blackberries)
- 1/4 cup (50g) granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
In the evening, whisk together the dry ingredients for the waffles in a large bowl. Heat the milk until warm, then stir in the melted butter and eggs. Pour the milk mixture into the dry ingredients and whisk until well combined. Cover and let sit at room temperature overnight, or for at least 8 hours.
In the morning, preheat your waffle iron according to manufacturer’s instructions. For the Berry Compote, combine all the ingredients in a saucepan over medium heat. Cook, stirring occasionally, until the berries release their juices and the mixture thickens slightly, about 10 minutes. Remove from heat and let cool slightly.
Cook the waffles according to your waffle iron’s instructions, using a scant 1/2 cup of batter per waffle. Serve the waffles hot, topped with the warm Berry Compote and any additional desired toppings, such as whipped cream, powdered sugar, or maple syrup.
