Pakoras are a beloved street food in India, traditionally deep-fried and often served as a snack or appetizer. However, our baked version offers all the crunch and flavor without the guilt of excessive oil. These paneer pakoras are a delightful addition to any gathering, whether it’s a family dinner or a festive celebration. They’re also incredibly versatile, making them an excellent accompaniment to your favorite curries or chutneys.

Ingredients:

  • 1 cup gram flour (besan)
  • 1/2 cup semolina (sooji)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 250g paneer, cut into cubes
  • 1/4 cup water (or as needed)
  • Oil spray for baking

For the Mint Chutney:

  • 1 cup fresh mint leaves
  • 1/4 cup fresh coriander leaves
  • 2 green chilies
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cumin powder
  • Salt to taste

Instructions:

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. In a large bowl, whisk together the gram flour, semolina, cumin seeds, coriander powder, red chili powder, baking powder, and salt.

3. Add the paneer cubes and gently mix them into the dry ingredients, making sure they are well coated.

4. Gradually add water, a few tablespoons at a time, and knead the mixture until it forms a thick, sticky dough. Be careful not to overwork the dough.

5. Using your hands, divide the dough into small, equal-sized portions and shape them into round or oval pakoras.

6. Place the pakoras on the prepared baking sheet, leaving some space between them. Lightly spray them with oil.

7. Bake for 15-20 minutes, flipping them halfway through, until they are golden brown and crispy.

8. While the pakoras are baking, prepare the mint chutney by blending all the chutney ingredients in a blender or food processor until smooth.

9. Once the pakoras are out of the oven, let them cool slightly and serve warm with the refreshing mint chutney on the side.

These baked paneer pakoras are a true delight – the perfect balance of crispy and creamy, with a hint of spice and the refreshing coolness of the mint chutney. Whether you’re hosting a party or simply craving a flavorful snack, these pakoras are sure to impress. Enjoy them hot, straight out of the oven, and savor every bite of this delicious Indian treat.
