Ingredients:

For the Falafel Bites:

  • 1 cup dried chickpeas, soaked overnight and drained
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cayenne pepper (optional for a little heat)
  • Salt and black pepper to taste
  • 2 tablespoons all-purpose flour or chickpea flour
  • Olive oil or cooking spray for baking

For the Tahini Sauce:

  • 1/2 cup tahini (sesame seed paste)
  • 1/4 cup fresh lemon juice
  • 1 clove garlic, minced
  • 1/4 cup water (or more to reach desired consistency)
  • Salt and black pepper to taste

Instructions:

For the Falafel Bites:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a food processor, combine the soaked and drained chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking soda, cayenne pepper (if using), salt, and black pepper. Pulse until the mixture is well combined but still has some texture.
  3. Transfer the falafel mixture to a bowl and stir in the flour until well incorporated.
  4. Using a tablespoon or a small cookie scoop, form the mixture into small balls or bites, about 1-inch in size.
  5. Place the falafel bites onto the prepared baking sheet, leaving some space between them. Lightly coat the bites with olive oil or cooking spray.
  6. Bake for 15-20 minutes, or until the bites are golden brown and crispy on the outside.
  7. Remove from the oven and let cool slightly.

For the Tahini Sauce:

  1. In a small bowl, whisk together the tahini, lemon juice, garlic, water, salt, and black pepper until well combined. Add more water if needed to reach your desired consistency.

Serve the warm falafel bites with the tahini sauce on the side for dipping or drizzling over the top. Garnish with fresh parsley or cilantro if desired. Enjoy these flavorful bites as an appetizer, snack, or a light main course with a fresh salad or pita bread.
