Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 tsp salt
  • 4 large eggs
  • 1 tsp vanilla extract
  • 8 oz white chocolate, melted and cooled slightly
  • 1 1/2 cups fresh raspberries

Instructions:

  1. Preheat your oven to 325°F (165°C). Grease a 9×13 inch baking pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a bowl, mix together the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of the prepared pan and bake for 8 minutes. Remove from the oven and let cool slightly.
  3. In a large bowl, beat the cream cheese with a hand mixer until light and fluffy. Gradually add in the sugar and beat until well combined. Add the flour and salt, and mix until incorporated. Beat in the eggs one at a time, followed by the vanilla extract.
  4. Pour half of the cheesecake batter over the graham cracker crust. Drizzle half of the melted white chocolate over the batter and gently swirl it with a knife or toothpick.
  5. Top with the fresh raspberries, gently pressing them into the batter. Pour the remaining cheesecake batter over the raspberries, and drizzle the remaining melted white chocolate over the top, swirling it again.
  6. Bake for 40-45 minutes, or until the center is almost set. Remove from the oven and let cool completely on a wire rack.
  7. Once cooled, refrigerate the cheesecake bars for at least 4 hours or overnight before slicing and serving.
