Ingredients:

  • 4 salmon fillets (6 oz each)
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh chives
  • 1 teaspoon grated lemon zest
  • 1/4 cup melted butter
  • Salt and pepper to taste

For the Lemon Butter Sauce:

  • 1/2 cup butter
  • 1/4 cup fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a shallow bowl, combine the panko breadcrumbs, Parmesan cheese, parsley, dill, chives, lemon zest, and melted butter. Season with salt and pepper, and mix well.
  3. Pat the salmon fillets dry with paper towels and season with salt and pepper.
  4. Dredge the salmon fillets in the herb-breadcrumb mixture, pressing gently to ensure an even coating.
  5. Place the coated salmon fillets on a baking sheet lined with parchment paper or a non-stick baking mat.
  6. Bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown.
  7. While the salmon is baking, prepare the lemon butter sauce. In a small saucepan, melt the butter over medium heat. Once melted, whisk in the lemon juice and chopped parsley. Season with salt and pepper to taste.
  8. Remove the baked salmon from the oven and transfer it to a serving platter.
  9. Drizzle the lemon butter sauce over the herb-crusted salmon fillets.
  10. Serve hot, garnished with extra chopped parsley and lemon wedges, if desired.
