Ingredients:

  • 1 lb beef sirloin or flank steak, thinly sliced against the grain
  • 1 large head of broccoli, cut into florets
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1/2 cup low-sodium beef broth or water
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 teaspoons cornstarch
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Cooked rice, for serving

Instructions:

  1. In a small bowl, whisk together the beef broth, soy sauce, brown sugar, rice vinegar, sesame oil, cornstarch, and red pepper flakes (if using). Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the sliced beef and season with salt and black pepper. Cook, stirring occasionally, until the beef is browned and cooked through, about 3-4 minutes. Transfer the cooked beef to a plate and set aside.
  3. Add the remaining 1 tablespoon of vegetable oil to the same skillet or wok. Add the garlic and ginger, and sauté for 30 seconds until fragrant.
  4. Add the broccoli florets and stir-fry for 2-3 minutes.
  5. Whisk the sauce mixture once more to incorporate the cornstarch, then pour it into the skillet or wok. Bring the sauce to a simmer, and cook for 1-2 minutes until thickened.
  6. Return the cooked beef and any accumulated juices to the skillet or wok, and toss everything together until well combined and heated through.
  7. Serve the Beef and Broccoli Stir-Fry hot over steamed rice.
