  • 1/4 cup (30g) all-purpose flour
  • 2/3 cup (160ml) freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1 cup (125g) fresh raspberries
  • Confectioners’ sugar for dusting

Instructions:

1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan and line it with parchment paper, leaving an overhang on the sides for easy removal.

2. In a medium bowl, cream together the softened butter and 1/2 cup of granulated sugar until light and fluffy. Mix in 2 cups of flour and salt until a dough forms. Press the dough evenly into the prepared baking pan.

3. Bake the crust for 15-18 minutes, or until lightly golden. Remove from the oven and let cool slightly.

4. In a separate bowl, whisk together the eggs, 1 1/2 cups of granulated sugar, 1/4 cup of flour, lemon juice, and lemon zest until well combined.

5. Scatter the fresh raspberries evenly over the pre-baked crust. Slowly pour the lemon filling over the raspberries, being careful not to disturb them too much.

6. Bake for 20-25 minutes, or until the filling is set and the center barely jiggles when you gently shake the pan.
